Hi folks,I made a new recipe up the other day.I had bought some special offers,ripe bananas,green peppers,both very reduced,and a gammon joint.

We had steaks cut from the joint for a quick tasty meal so had the bit left over,too small to roast or boil.

So I made this.

Saute 1 onion,2 chopped  green peppers,then add in 12 - 16 oz gammon(raw) cut in chunks,and saute lightly.Pop in a tin of plum tomatoes,chopped up,and 3oz cut green beans,add a tbsp tomato puree.Mash 2 ripe bananas,and mix well in,with a dash of cider or unsalted stock.Cook till all tender,about 30 mins.

This is tasty and a sweet contrast to the salty ham,without any sugar.I thought I'd post it here in case anyone could use it,if they liked a sweetish sauce with the ham/gammon. Tongue Grin

I'm not diabetic myself but one of my neighbours is and she is always grateful for new recipes. I've passed this one on and she asked me to relay her thanks to you.

Hey Toots, tried that today with stock cube .Never thought of adding a banana
but i gave it a go and yes it was very nice, i got a knuckle  of bacon from the butchers and did it with that .Made a nice change thanks. Smiley

thanks toots im diabetic and struggle with meals etc but im sure my good lady will have a go for me
