Hi folks,I made a new recipe up the other day.I had bought some special offers,ripe bananas,green peppers,both very reduced,and a gammon joint.
We had steaks cut from the joint for a quick tasty meal so had the bit left over,too small to roast or boil.
So I made this.
Saute 1 onion,2 chopped green peppers,then add in 12 - 16 oz gammon(raw) cut in chunks,and saute lightly.Pop in a tin of plum tomatoes,chopped up,and 3oz cut green beans,add a tbsp tomato puree.Mash 2 ripe bananas,and mix well in,with a dash of cider or unsalted stock.Cook till all tender,about 30 mins.
This is tasty and a sweet contrast to the salty ham,without any sugar.I thought I'd post it here in case anyone could use it,if they liked a sweetish sauce with the ham/gammon.
