For the cake

2 oz plain cooking chocolate
1 tspn coffee granules
3 tblspn milk
6 oz soft butter
6 oz caster sugar
4 oz potatoes, boiled, mashed and cooled (unsalted)
3 eggs
6 oz self raising flour
2 oz cocoa flour
Salt, pinch
1 tspn baking powder


Filling & topping

1 tspn coffee granules
1 tspn water
3 oz butter
2 oz potatoes, boiled, mashed and cooled (unsalted)
1 oz cocoa powder
10 oz icing sugar


Decoration

24 walnut halves


Oven temperature: 180 C, 250 F, gas mark 4


Method

1.   Melt the chocolate over a pan of hot water, stir in the milk and coffee granules and leave to cool slightly
2.   Cream the butter, sugar and potato until light and fluffy.   Gradually beat in the eggs and the melted chocolate mixture.
3.   Sieve the flour, cocoa, salt and baking powder together and fold into the mixture.
4.   Divide the mixture between two greased 8” sandwich tins and bake for 25 – 30 minutes
5.   Allow to cool slightly before turning out onto a rack
6.   To make the filling, dissolve the coffee granules in the water
7.   Place butter, dissolved coffee and potato in a bowl, add the sieved cocoa and icing sugar and beat until smooth.   If a little soft just add a little more cocoa &/or icing sugar.
8.   Use half the filling to sandwich the cakes together and decorate the top with the remaining half and the walnuts
9.   ENJOY

Facinating!!

What does the addition of potaoto do to the texture of the cake Huh  Does it add more moisture???  And does it keep well ... that's if cake is able to be kept !! Shocked)
