Just couln't resist the opportunity to fill in the blank!!  This is the best Simnel cake I have ever made.  I used to make this to take into church on Mothering Sunday.

It is taken from Delia's 'Book of Cakes' pg 129.

The twist is to add the grated rind of a lemon and an orange to the mix. Magic!

For cake mix:
           Use an 8" (20 cm) cake tin greased & lined

6oz butter
6oz caster sugar
3 large eggs
6oz currants
8oz sultanas
2 oz glace cherries – rinsed dried and cut into ¼'s

Grated rinds of 1 orange and I lemon

2oz chopped candied peel
8oz plain flour
1tsp baking powder
3tbsp milk

For topping & filling:

12oz ground almonds
12oz sieved icing sugar
3 large egg yolks
2tsp lemon juice
1tsp almond essence
1tbsp brandy/sherry (approx)
1dsp apricot jam or redcurrant jelly
1 small beaten egg

Method:   Preheat oven gas 2 (300 deg f.) (150 deg c.)

Cream butter in bowl, add sugar, beat till light & fluffy
Separate bowl beat eggs; combine slowly to the above to avoid curdling mix
Use metal spoon fold in fruits, peel and rinds.
Sift flour, b-p, mix spice together and with metal spoon carefully fold into mix alternately with milk.

Carefully spoon half the cake mixture into tin.  Leave the rest until almonds paste is made:

Almond Paste:

Combine 12oz ground almonds with 12oz icing sugar
In jug mix 3 egg yolks with lemon juice and almond essence.
Stir this into almond mix.
Knead to still paste, (you may need little extra lemon juice or tsp of brandy!)
Divide into thirds.  Place 2/3 in poly bag and keep cool in fridge.
Shape 1/3 into 8" round, you can roll this out if preferred.
Lay the round very gently onto the cake mix in tin.
Spoon rest of cake mix on top.

Bake cake in centre of oven fro 21/2 – 3 hours or until firm and springy.

Leave cake in tin to cool 15 mins. 
When cool brush with warmed jam or jelly, cover with 1/3 round of almond past, use rolling pin to press into place and level off as much as possible.  Score top into criss-cross pattern if desired.
Turn remaining 1/3 paste into 11 or 12 little balls.
Brush top with beaten eat and affix 'Apostles' all round, press on firmly brush with egg.

Place cake under hot grill to toast to golden brown colour.

I saw one being made by Mary Berry on TV a couple of months ago, lovely.
