Bought a couple of nice cod loins today, wrapped them in good smokey bacon, drizzled with olive oil, a good grind of black pepper and roasted them in a low-ish oven for an hour.  The outcome, crispy bacon crust, opening to reveal creamy white, suculent moist fish which had a delish smokey flavour!  Served with veggie mash (pumpkin, carrot, spud) and peas.  YUM!

I have  now made the same meal  several times using Colie ( Black cod), I have got the kids to wrap the fish  and because they have made it it has been a great hit with them, thanks for the idea.
