Both recipes make 12

Raspberry Muffins
 8 oz plain flour
4 oz caster sugar
2 tsp baking powder
1/2 tsp salt
7 oz raspberries
1 egg, lightly beaten
8 floz milk
4 floz vegetable oil

Mix all the dry ingredients in a bowl, stir in raspberries and make a well in the center.  Mix together remaining ingredients . Add to dry and stir gently until mixed in but still lumpy. (do not overbeat)
Spoon into muffin cases and cook in a preheated oven, 200c/400f or gas 6, for 20 mins until well risen and springy to the touch.

Raspberry and lemon muffins
6oz plain flour
2 Teaspoons Baking powder
2 oz granulated sugar
2 oz soft brown sugar
2 tsp ground cinnamon
pinch of salt
1 egg lightly beaten
4 oz butter or marg melted
4 floz milk
4 oz fresh raspberries
2 tsp grated lemon rind

For the topping
3 oz icing sugar
1 tbsp lemon juice

Mix together all the dry ingredients in a bowl. Make a well in the center, add egg, butter or marg, and milk until the ingredients are just combined. Stir in raspbs and lemon rind. Spoon into muffin cases and bake in a preheated oven at 180c/350f or gas 4 for 20 mins until golden brown and springy to the touch.
If using mix together topping ingredients and drizzle over warm muffins.

Thanks DP.  I am at the plot tomorrow with punnets at the ready to pick again.  Still have the first picking in the fridge and they are soooooo gorgeous!  Will do some baking tomorrow afternoon!  Grin

Okay, I'm convinced!  Grin I also love blueberry muffins so may try this recipe and substitute the raspberries for blueberries.

Made the raspberry muffins at 11pm - a tray of 12.  They were all gone by 7.30am the following day.  The boys loved them (and so did we Grin).

Just checking before I make them, DP, whether the raspberry and lemon muffins need any raising agent, eg baking powder.

Yes Jill, 2 teaspoons baking powder Grin  I made banana muffins this am and have now hidden them because they were dissapearing way too fast and was hoping they would go in lunch boxes this week!

Thanks DP!  Rasp and lemon muffins made and rose beautifully Wink.  Didn't last long though.  The Phantom Muffin Nicker paid us a visit - well that's what the boys and OH claimed.

I thought both recipes were scrummy.  OH preferred second recipe and boys decided they'd like 1st recipe with icing from second.  Extra hard workout at the gym now needed.

I made the raspberry and lemon muffins today for my heavily pregnant best mate. She LOVED them! Served with raspberry leaf tea !

Think my raspberries were a bit too big tho as they all sunk to the bottom and made the bottom a bit soggy. Will chop them up a little next time I think.

Hi Siobhan can i suggest you lightly dust the raspberrys in flour that should stop them sinking. Cheers Rosebud.
